Red Lentil Spinach Soup

Serves: Makes 6-8 servings, 6 ounces each  |  Prep Time:  |  Cook Time:

Ingredients

  • 2 tablespoons olive oil
  • 1 small chopped onion
  • 4 medium chopped carrots
  • 1 1/2 teaspoons ground cumin
  • 2 cans vegetable broth
  • 2 cups water
  • 2 cans diced tomatoes
  • 1 cup red lentils
  • 1 cup baby spinach

Preparation

  1. Place olive oil in large pot and heat.
  2. Add onions and carrots.
  3. Cook until soft, about 10 minutes.
  4. Add cumin.
  5. Stir and cook for one minute.
  6. Add lentils, stock, tomatoes, and water.
  7. Cook for 15 minutes.
  8. Taste lentils to make sure they are soft.
  9. Wash spinach.
  10. Take the pot off the stove and stir in spinach.
  11. Salt and pepper to taste.
