Peach and Berry Bake

Light and fruity dessert

Serves: 4 Prep Time: 20 minutes Cook Time: 1 hour and 15 minutes

Ingredients

  • 3 whole peaches, halved and pitted
  • 2 tablespoons canola or vegetable oil
  • 2 cups raspberries
  • 1 cup vanilla yogurt
  • 1 tablespoon lemon juice
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon

Preparation

  1. Heat oven to 350° F
  2. Put peaches in a small baking dish. Sprinkle with lemon juice.
  3. Sprinkle oil over the peaches.
  4. Bake for 1 hour. Remove from oven and cool.
  5. Combine the brown sugar, raspberries, and cinnamon in a medium size frying pan. Cook ingredients on medium heat for 5 minutes.
  6. Mix yogurt with berry mix in a large bowl.
  7. Top peaches with berry mix. Serve warm.
  8. Refrigerate leftovers.
