No-Bake Pumpkin Oatmeal Cookies
Serving size: Makes 20 cookies
Ingredients
- 3/4 cup quick oats
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 cup brown sugar
- 1/4 teaspoon cinnamon
- 1/3 cup canned pumpkin
- 2 tablespoons milk or milk alternative
- 1 tablespoon oil
- 1/2 teaspoon vanilla extract
Preparation

In a medium bowl, combine oats, flour, salt, baking soda, and sugar. Stir well.

In a small bowl, combine pumpkin, milk and oil. Stir into dry ingredients.

Scoop by rounded tablespoons and use your hands to form into balls.

Serve and enjoy or refrigerate to firm before serving.

Refrigerate leftovers.
