Raw Corn Salad

Serving size: 1 cup

  • 4 ears corn
  • 2 tomatoes, chopped
  • 1 cucumber, chopped
  • 1/2 red onion, chopped
  • 2 tablespoons vegetable oil
  • 1/4 cup vinegar
  • 1 cup fresh basil, chopped
  • Salt and pepper, to taste 

Preparation

  1. Remove husks from corn and cut kernels off the cob. 

  2. Combine corn, tomatoes, cucumber, and onion in a large bowl. 
  3. In a small bowl, combine oil, vinegar, basil, salt and pepper. Mix well. 
  4. Pour dressing on the salad and toss. Serve and enjoy! 

  5. Refrigerate leftovers.
